Secrets to coffee heaven
Our Coffee Beans are bought from Union hand-roasted who source premium quality coffee direct from single estates and smallholding co-operatives. The beans are roasted in small batches, by hand, in their East London roastery. The artisan roast-master is responsible for guiding each roast, developing the depth of flavour and complexity that can be tasted in a cup of delicious, fresh roasted Union hand roasted.
- Great beans: For great coffee, you need to start with great beans. We use the finest quality gourmet coffee beans, a fairly-traded blend sourced from Guatamala (for spicy dark chocolate) Costa Rica (bright acidity), Kenya (zesty top note) and Sumatra (for weight and body). Hand-roasted by Union hand roasters in East London (available for sale here, pre-ground or whole beans, just ask).
- Freshly ground to order: Coffee shops generally, and all coffee chains, use an automated grinder to grind and store a quantity of coffee ahead of time for later use. This means that, unless you grind at home, you may never have tasted a coffee, on the high street, made from freshly ground coffee beans. Coffee deteriorates immediately after grinding. It’s rare to find a coffee shop in London where coffee is ground to order this way, there are less than a dozen cafes that do this. We grind our beans only when you order your drink, so your coffee is freshly ground!
- Generous double shots: Our standard drinks are double shots of coffee. We load the basket with about 20gm of fresh coffee. Most chains use a 7gm single shot as standard topped with loads of milk. Their double shots are 14 gm. Don't be fooled by the huge cup, you’re actually getting extra milk but being short-changed on coffee!
- Hand Pressing: We use a specially designed tamper to hand-press our coffee, this makes the press more even and allows us to use more pressure (about 30lbs) so we pack the coffee evenly and tightly for a perfect pour.
- Filtered Water: machine is fitted with a water filter to allow only freshly filtered water into the machine. The result is that your coffee is pure and tastes even better.
- We flush the machine with water before each pour to prepare the group head and make sure you get a clean shot of coffee.
- Manually poured shots: All chains and most coffee shops use an automatic setting to time their espresso shots, to allow poorly trained staff to use the machine. But to pour a perfect tasting espresso shot means cutting the shot manually at the right point, judging each pour by sight. The result is a smoother taste.
- Fresh milk: We use the finest organic milk from Coombe Farm, Somerset. In many coffee shops you’ll notice huge steaming jugs where fresh milk is mixed with old already heated milk. We use smaller steaming jugs and fresh, cold milk for each coffee.
- We don't overheat the milk: Most consumers in London have grown used to overheated milk for their coffee. This results in burnt milk and loss of sweetness. We heat our milk to the perfect temperature of 60-65C degrees (145 F), allowing the sweetness of the milk to compliment the coffee.
- Perfect texture: If you order a latte or cappuccino we know how to steam the milk perfectly to give a silky smooth texture. Whether we use whole milk or skimmed we can achieve a creamy texture for your coffee.
- Free-pouring: We never use a spoon or knife to scoop foam from the jug. Our milk is textured and blended together so that the micro-foam we’ve achieved is blended throughout the milk. This allows us to 'free-pour' the milk into your coffee allowing it to separate slowly in the cup.
- Carefully selected cup sizes: We offer 2 cup sizes for our coffee, 8oz and 12 oz. These allow the full taste of the coffee to be enjoyed with the right amount of milk. We don’t drown a single shot of pre ground coffee in an ocean of over-heated milk. The 8oz gives the strongest flavour as it contains less milk.
- Latte art: The designs that we create on top of your latte come with a lot of practice and can only be achieved with perfectly textured milk. The patterns are free poured and no stencils are used.
